THE PERFECT {VEGAN} BANANA BREAD

Banana bread has become the COVID bread to make, it has become hugely popular in the last number of weeks, so I’ve decided to share my banana bread recipe with you all.

nIt is vegan, sugar free and gluten free so what’s not to love!

nINGREDIENTSn4 medium ripe bananasn¼ cup / 63ml olive oil/rapeseed oil or what ever oil you prefern¼ cup unsweetened nondairy milk I am using Rice.n2 tsp pure vanilla extractn240 g of gluten free flourn1 tea spoon of honey, optional.n1 tsp cinnamonn1 tsp baking sodan½ tsp saltnsliced bananas, for topping

nINSTRUCTIONSnPreheat the oven to 350F. Spray a 9×5 loaf pan with nonstick spray.nIn a large mixing bowl, roughly mash the bananas. Add the honey, oil, vanilla, and almond milk, and whisk to incorporate.nSift in the flour, baking soda, salt, and cinnamon, and use a wooden spoon to mix.nTransfer the batter to your prepared pan, and top with the extra banana slices.nBake for about 45 minutes, then cover with foil and bake for 10-15 minutes longer, until a toothpick inserted in the center comes out with just a couple crumbs.
